Our History

Our history and the team that has helped shape our restaurant

Dave’s Place is more than a restaurant. It is a tribute to local flavor, lasting friendships, and a shared vision rooted in community and hospitality.

It began when Dave Mercer purchased a historic property that would become the restored Village Inn Hotel. With a deep appreciation for local culture and a desire to build something timeless, he imagined a gathering place that blended the charm of mid century design with modern comfort and genuine connection.
That idea found its culinary partner in Chef David Jaskolski, a Santa Barbara native with deep Central Coast roots. With decades of experience in the restaurant world, including past work with the Timbers Restaurant and more recently the Pink Pig BBQ and Village Coffee Stop Café, David brought both skill and heart to the project. A simple conversation turned into a partnership shaped by a shared passion for great food and memorable experiences.

Dave’s Place grew from that collaboration. The space was thoughtfully designed and built with local talent, local ingredients, and local partnerships that reflect the spirit of the region. Slow smoked BBQ, oak grilled steaks, fresh seafood, and produce from the area all come together to celebrate the Central Coast’s rich culinary landscape. Every dish is prepared with care, and every detail is meant to make guests feel welcome.

Today, Dave’s Place serves as a cornerstone of the Village Inn Hotel, a boutique retro modern destination just minutes from the California coast and Vandenberg Space Force Base. Whether you are a longtime local or a visitor passing through, you will find warm hospitality, bold flavors, and a sense of place that feels truly unique.
Come hungry. Leave inspired.
